Fill the Cookie Jar: Recipe #2
We have been BUSY after Thanksgiving, so I have not had time to add the second installment for our “Fill the Cookie Jar” series. That just means you get TWO recipes to fill your cookie jar this week!

This week’s cookie: Cornbread Cookies with Honey Buttercream Icing
This is my FAVORITE cookie ever. So much so that this batch was gone before I could take photos for this post! These cookies have the soft texture of a sugar cookie with the grittiness of cornmeal. Paired with sweet honey buttercream icing-you really can’t go wrong!
Ingredients
Cookies
- 1 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 eggs
- 1 t vanilla
- 1 3/4 cups flour
- 3/4 cup cornmeal
- 2 t baking powder
- 1/2 t salt
- 1.5 T honey
Icing
- ½ cup butter, softened
- 3 cups powdered sugar
- 2 T honey
Directions
Cookies: Mix butter, sugars, and honey until well combined. Stir in eggs and vanilla.
In a separate bowl, mix together flour, cornmeal, baking powder, and salt until thoroughly blended.
Add both mixtures together and stir just until combined. Chill dough 30-60 minutes.
Preheat oven to 350 degrees F. Line baking sheet with parchment paper.
Roll dough into 1.5” balls and place on baking sheet, then flatten the tops slightly to promote even cooking (shown in photo). Bake for 12 minutes, until the edges barely start to darken.
Remove from oven and place on cooling rack.
Icing: Soften butter and place in mixing bowl. Add 2T honey and 1 cup powdered sugar. Mix with whisk or whisk attachment until thoroughly combined. Continue adding sugar until icing becomes a mayonnaise consistency.
Once cooled, top cookies with icing and enjoy!!
