Firstly, I want to apologize that this did not get posted December 19th, as promised. The holidays got BUSY around here, so I simply never got around to it.

A little about these Hot Cocoa Cookies

Anyways…this cookie was a favorite in my house! The toddler LOVED that it had marshmallows and the husband (who isn’t a dark chocolate or marshmallow fan) had them gone before I could get a photo for the bloggy…in fact, I took the last two from him so I could snap a quick photo.

Chef’s notes for Hot Cocoa Cookies

These are super gooey and have a rich chocolatey flavor. I like dark chocolate- and this one has more of a dark chocolate flavor than most. So, if you like more of a milk chocolate flavor, cut the cocoa powder to 1/3 cup.

Hot Cocoa Cookies: Ingredients

  • 1/3 cup sugar
  • 1/4 cup brown sugar
  • ½ cup butter, softened
  • 1t vanilla
  • 1 egg
  • ⅓ cup cream or milk
  • 1 1/3 cup flour
  • 1/2 cup cocoa powder
  • 1/2 t baking soda
  • 1/2 t salt
  • 1/2 cup dehydrated marshmallows
  • 1/2 cup chocolate chips

Hot Cocoa Cookies: Instructions

Preheat oven to 350 degrees F and line a baking sheet with parchment paper.

Add butter and sugars to a stand mixer and cream together until fluffy. 1/3 cup sugar, ¼ cup brown sugar, ½ cup butter

Add in egg, vanilla, and cream and mix until well combined. 1egg, ⅓ cup cream, 1t vanilla

In a separate bowl, mix together flour, cocoa powder, baking soda, and salt. 1 ⅓ cup flour, ½ cup cocoa powder, ½ t baking soda, ½ t salt

Add dry ingredients to wet ingredients and mix until combined. Add in half the marshmallows and half the chocolate chip. Stir to combine.

Drop by rounded tablespoon onto parchment paper lined pan. Add a few chocolate chips and marshmallows to each cookie. Bake 8 minute, centers will still be gooey. Remove from oven and allow to cool for 5 minutes on hot baking sheet before moving to cooling rack.

Hot Cocoa Cookie Conclusion

I think these are the perfect cold weather cookie and they will certainly be on rotation in our house this winter! Let me know if you make them and what your thoughts are!
