
Yep! You read that right! SUPER SIMPLE DIY ICE CREAM CAKE. How simple is it? Can you forget ice cream out on the counter for an hour? It’s that simple.
The first year my husband and I were dating, I made him this ridiculous, loaded, ice cream cake that consisted of 3 different ice creams, peanut butter m&m’s, chocolate sandwich cookies, cake icing, and whipped cream. Boy, was it a pain! I had ice cream and cookie crumbs all over the kitchen and by the time it was done it looked like a unicorn pooped in a cake pan. It was delicious though! So this year (4 years later) I decided to try it again, but in a much easier fashion. Sure, I could just go to DQ and buy one, but where is the fun in that?! Plus you can’t really customize the flavors and toppings now can you? You can take this recipe and make so many different flavor combinations like cookies and cream, strawberry shortcake, chocolate fudge brownie…the possibilities are endless! Anyways, here is the how-to.
Ingredients
1 half gallon tub of chocolate ice cream
1 half gallon tub of cookie dough ice cream
1 pack of crunchy chocolate chip cookies (2 packs if you want to use them for decorations!)
3 tablespoons of melted butter
1 16oz package of chocolate chips
Directions
Set the tub of chocolate ice cream out and allow to soften all the way through, typically 30-45 minutes. While that is melting away, place 15 cookies in a food processor with the melted butter and process until you have a dough. Press the dough into the bottom of a spring form pan for your first layer. (You can skip this step and just lay the cookies in the bottom to form the crust but I really like the flavor the butter creates in this particular recipe.) Make sure your spring form pan is in the locked position and spread the melted ice cream evenly to create the second layer. Shake the pan to get out any air bubbles and allow the ice cream to settle. Gently place the remaining cookies on top of the ice cream to form the next layer. Place the cake in the freezer and set out the cookie dough ice cream tub to melt. Once it has softened, spread it on top of the cookie layer, gently shake to let out any air bubbles and allow to settle. Now for the toppings! I had two containers of chocolate chip cookies so I decorated the top by pressing them in the top layer sideways (see photo) and then sprinkling the chocolate chips all over the top. I would have added whipped cream around the edges BUUT it was for my husband’s birthday and he does not like whipped cream! So, there ya have it! Super simple DIY ice cream cake.
