Cinnamon Roll Peach Cobbler

As if peach cobbler needs any help with being delicious…why not add chunks of cinnamon roll and some gooey icing? Do I have your attention now? Well read on and I will tell you how to do it…

Back in the summer, a good friend of mine dropped off a box of fresh peaches from a local orchard. It was right in the middle of canning season, so naturally, I canned every last one of them! This recipe was the first time I tried any of those peaches and ooohh myyyy! They are SOOO much better than store-bought canned peaches. Hopefully this summer I can get my hands on some more so I can restock our pantry and share with you how I process them.

Cinnamon roll peach cobbler drizzled with icing

Cinnamon Roll Peach Cobbler | Prep Time: 10 Minutes | Cook Time: 40 Minutes | Temp: 350 F

Ingredients

Cobbler

  • 2 cans of cinnamon rolls, uncooked
  • 4.5-5 cups of canned peaches
  • 3 teaspoons of cinnamon
  • 1 teaspoon of vanilla

Icing

  • 2 tablespoons of butter
  • 3 cups of powdered sugar
  • Splash of milk

Start by mixing the icing because you will need half to mix in the cobbler before baking and half to drizzle on top.

Icing: Melt butter in a large bowl, then add powdered sugar. Mix together until it forms a paste. Add splashes of milk and stir until you get a ketchup-like consistency. Set aside.

Cobbler: Preheat oven to 350 degrees Fahrenheit and coat a 9×13 glass baking dish with chilled butter. Carefully open the cinnamon roll packages so you don’t unroll the dough. Remove each roll and lightly squish the sides together so the roll does not come apart while cutting. Cut each cinnamon roll into 4-6, bite-size pieces and place in a large bowl. Drain 1/3 cup of the juice off of the canned peaches and add to the bowl, discarding the rest of the juice. Add cinnamon, peaches, and half of the icing to the bowl, gently stir until all ingredients are combined. Bake for 40 minutes or until the cinnamon roll pieces are a light golden brown and no longer doughy. Remove from the oven and allow to cool for 10 minutes then drizzle the remaining icing over the top. Serve warm.
