This is one of my FAVORITE breakfast recipes I’ve ever concocted! Hands down. There’s just something about sweet and savory breakfast dishes that fills me with happiness and makes me want to eat until I pop. This recipe combines the savory goodness of breakfast sausage or bacon and scrambled eggs with sweet pancakes topped with maple syrup and butter!
Making the pancake batter
Go ahead and get your oven preheated to 375 F while you mix up the batter.
I have a sourdough starter that I use to bake bread with every weekend. So every Saturday morning, I have some sourdough discard to use up and I like to use it in the pancake recipe included in this McGriddle Casserole recipe. I have included instructions for if you do not have a sourdough starter and it’s just as tasty! If you’re trying to eat healthier, you can swap the pancake recipe for something like Kodiak Cakes pancake mix or something similar!
Making the eggs
There’s a lot of ways to make eggs. You can make scrambled eggs anyway you like, however for this recipe, you‘ll need to be sure they are fluffy and moist! The pancake batter will dry the eggs a bit as they cook and I find mixing in a bit of heavy cream with the eggs makes them fluffier and stirring in some butter once they are done cooking keeps them moist and adds to the flavor!
Assembling the McGriddle Casserole
Once you have your pancake batter ready and sausage (or bacon) and eggs cooked, you’re ready to assemble!

Start by buttering the sides and bottom of a 9×13 baking dish. Spread half of the pancake batter in the bottom of the dish. Then evenly distribute the sausage or bacon over the bottom pancake layer.
Drizzle half a cup of maple syrup over the bacon, making sure each bite will have a bit of syrup!

Next, spread your scrambled eggs over the bacon layer and top with cheese. You can use shredded or sliced cheese. I like to use sliced cheese, but break each slice into quarters. I then place the cheese on top of the eggs as if the cheese is in the middle of a slice of the finished casserole. This allows the top layer of pancake batter to envelope the fillings instead of sitting on top.
Top with remaining pancake batter and spread to cover the entire dish. Top with 1/2 cup of maple syrup and lightly swirl into batter to prevent the hardening and burning of the sugars in the syrup.

Baking the McGriddle Casserole
Place casserole on the middle rack of your oven and back for 25-30 minutes. The batter will turn a golden brown color when done. You can check done-ness by inserting a toothpick in the center to see if it comes out clean. If it has batter on it, it is not yet done. Once it comes out clean, your casserole is ready to come out!

McGriddle Casserole
Ingredients
- Pancake Batter
-1 egg
-2 cups flour
-1.5t baking powder
-1t baking soda
-3T sugar
-1t salt
-1 3/4 cup milk
-2T melted butter
-1/2 cup sourdough discard or increase butter to 4T and milk to 2 cups - Filling
-7 eggs
-1/3 cup cream or milk
-1lb bacon or sausage
-2T melted butter
-1 cup maple syrup
-8 slices of cheddar cheese
Add ground sausage or bacon to large skillet and begin to brown while you prepare the rest of the dish.
Make Pancake Batter
Add all pancake ingredients to a large bowl and mix until smooth and no lumps remain
Coat a 9×13 casserole dish with butter or cooking oil of choice. Pour half of the pancake batter in the bottom of the dish. Once the sausage or bacon is fully cooked, sprinkle it over the layer of pancake batter. Drizzle 1/2 cup syrup evenly over sausage or bacon, being sure each bite will have syrup!
Preheat oven to 375 degrees F
Make Eggs
Whisk together 7 eggs with heavy cream. Add mixture to skillet and scramble until fully cooked. Salt and pepper to taste. Drop 2T of butter into eggs and stir until melted. Spread cooked egg mixture over the meat layer.
Break cheese slices into quarters then place on top of eggs, being sure there’s space between each slice for batter to fill in.Then pour remaining pancake batter over the entire dish, being sure it is all covered. You may need to spread the batter with a spoon to cover everything. Pour the remaining syrup over the top, being sure each bite will have syrup!
Bake for 25-30 minutes, until the batter is golden. Remove from oven and enjoy! You may top with more butter and/or syrup, but this dish is great as is.
