Cast Iron Skillet Breakfast

Between working on the farmhouse, caring for our livestock, and working full-time jobs; cooking is sometimes a bit of a burden. To avoid a bologna sandwich diet, I’ve been trying to stick with larger, one-dish meals that allow me to cook a lot of food at once with minimal clean-up.

Cooking with cast iron skillets certainly helps keep the dishwashing to a minimum. If you’ve never used cast iron I highly suggest getting one good pan, seasoning it up, and using it! You don’t have to deal with food sticking (if it’s seasoned properly) and you don’t need to wash with soap and water, just wipe it out with a cloth and warm water! That’s a win-win for me.

Another favorite thing about cooking with cast iron is the ability to go from stove-top to oven without transferring your food to a new dish. It makes it really easy to create a one-dish meal like this one!

This recipe falls in the category of “breakfast food” but it’s super easy to add in things or omit the eggs to create a dinner-time meal instead. My favorite addition is summer squash and topping it off with shredded cheddar and salsa!

Cast Iron Skillet Breakfast

Ingredients

  • 1/4 cup cooking oil
  • 4 medium potatoes
  • 1/4 cup of diced onions
  • 5-7 large eggs
  • 1 1/2 cups of diced smoked sausage
  • Salt and Pepper to taste

Tasty Add-Ins

  • Cheese
  • Salsa
  • Squash
  • Fresh chopped greens
  • Ground sausage
  • Bacon crumbles
  • Pepper gravy

Instructions

Add the oil to the bottom of a 10″ or larger skiller. You may need more or less oil depending on the pan size, but you will want the oil about 1/8″ deep. Allow the oil to heat over low-medium while you prepare the ingredients. Dice the onions fairly small and cube the potatoes into 1/2″ chunks. Once the oil is hot enough to sizzle a drop of water, add your potatoes, onion, and any other starchy vegetable you are using. Sprinkle with salt and pepper to your liking and stir to coat. Allow the mixture to cook 2-3 minutes and stir/flip to brown on the opposite side. Stir in smoked sausage and allow to cook for another 2-3 minutes. Crack your eggs and place them on top of the mixture as if you were going to fry an egg, sprinkle with salt and pepper, cover with a lid and turn your heat to low. Once the eggs are done to your liking, remove the skillet from heat and add your toppings. Serve and enjoy!
